This was actually a Picnic Roast Pork. I have passed by this type of meat, thinking it would be too complicated. It was actually very easy. I did take the layer of fat off and that I didn't need to do, next time I won't do that. It was tasty just the same.I used that layer of fat and the bone for my red beans that I cooked the next day.
I used the recipe from Spoonbread and Strawberry Wine cookbook (it is available on Amazon, https://amzn.to/3aAhblJ), by Norma Jean and Carole Darden. This book is filled with their family stories and recipes.
The pork recipe is from J. B. Darden and he is described as a meat and potato man, his profession was a druggist. Once one of he thought one of his elderly patients couldn't pay. He refused to accept money. When she died, she left him a considerable sum of money in her will.
The roast was about 5lbs+
Cloves of garlic minced
Salt and Pepper to taste
Bay Leaves
1/2 cup of white vinegar
1/2 teaspoon dried thyme
Preheat oven 325°. Pierce the roast in several places, forcing minced garlic and then sprinkle with salt and pepper, placing in pan with bay leaves on the bottom. Place in roasting pan fat side up. Pour on vinegar and thyme evenly over the roast. Place in oven cooking 35 minutes per pound. Baste occasionally.It really was delicious and I can't wait to do it again with fat left on. Another tip, have a really sharp knife for slicing. Then you won't look like a homicidal maniac.
